Our 2010 Extra virgin olive oil comes from Monte San Savino in Southern Tuscany and is produced by a farmer who tends to the oliveto (olive grove) organically, with many of the trees over 1000 years old.  The olives have been harvested gently and pressed at a frantoio (olive mill) that uses the latest technology to preserve the nuances of the olives.  This olive oil has been allowed to settle in large stainless steel tanks to preserve the fresh, intense fruity flavor, charteuse color and peppery long finish.
