Our Aceto Balsamico di Modena is created from two ingredients, and two ingredients ONLY. The first ingredient is the slowly simmered and concentrated grape must (juice) from Trebbiano and Lambrusco grapes, which over 24-36 hours reduces and caramelizes the sugars. The second ingredient is wine vinegar. It’s important to check the back of any bottle of balsamic vinegar to make sure that there aren’t other “fake” ingredients like caramel color. The concentrated grape must gives the Balsamico it’s fruity, rich, sweet backbone while the wine vinegar gives it the slight acidity. Our Riserve Dark Balsamic Vinegar has a healthy apparent acidity level with a strong sensation of sweetness for balance.
Recipe suggestions: Our Riserve Dark Balsamic Vinegar is perfect for salads, fantastic on fresh mozzarella cheese, perfect in marinades and sprinkling on roasted vegetables or deglazing pans with dark, oak scented juices.
