Who doesn't love a good "insalata di farro"? Farro/spelt is a species of wheat that has been cultivated since 5000 BC. The shell of spelt is harder than that of wheat and helps protect the nutrients present, also allowing it to withstand attacks by pollutants (e.g. pesticides) and even insect invasions. Spelt contains more protein than wheat and is easier to digest. Some people who are allergic to wheat can tolerate spelt although it still contains gluten. Spelt has essential nutrients such as: thiamine, niacin, riboflavin, magnesium, as well as B vitamins, and complex carbohydrates with fiber components and high in protein.
