Orzo, better known as barley, is found mainly in Europe but especially Italy who is one of the main producers of this cereal. "Orzo Mondo" (world barley) is the bare form of the common barley in which - when threshing - the glumelle separate from the kernels which remain bare. This type of barley fell into disuse in the second half of the century but has recently seen a resurgence thanks to greater attention being paid to heirloom and alternative food products.
