Zuppa Antica/Ancient Soup
Contains 50% Orzo Mondo/Barley & 50% Cicerchie decorticate/Hulled Grass Pea
Soak the ingredients in cold water for 1 hour. Drain and rinse, place in a pot covering it with plenty of water, add carrot, onion, celery and parsley and let it boil on low heat for about 1 hour, until all the ingredients are tender. Serve the soup with its own broth, seasoning it with L'arte Extra Virgin Olive Oil, salt, pepper and Parmesan cheese.
