King Asture's Soup
Contains Orzo Perlato/Pearl Barley 45% - Farro Perlato/Spelt 45% - Fagiolina del Trasimeno Bean 10%
Soak the ingredients in cold water for 1 hour. Drain and rinse, place in a pot covering it with plenty of water, add carrot, onion, celery and parsley and let it boil on low heat for about 45 minutes, then add a can of tomatoes and some fresh sausage and continue to simmer until all the ingredients are tender. Serve the soup with a healthy drizzle of L'arte Extra Virgin Olive Oil, salt, pepper and Parmesan cheese.
